Description

A simple yet flavorful dish featuring tender chicken breasts baked with vibrant vegetables and a tangy balsamic glaze.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper in a bowl.
  3. Place chicken breasts in a baking dish and pour the balsamic mixture over them.
  4. Add cherry tomatoes around the chicken.
  5. Bake for 25-30 minutes, or until the chicken is cooked through.
  6. In the last 5 minutes of cooking, add spinach on top of the chicken.
  7. Remove from the oven and garnish with fresh basil before serving.
