- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 small onion, diced
- 2 stalks celery, chopped
- 1 medium carrot, peeled and diced
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 4 cups chicken broth
- 2 cups cooked chicken breast, shredded
- 2 cups half and half
- 1 pound potato gnocchi
- 1 cup fresh spinach, chopped
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Heat olive oil and butter in a large pot over medium heat. Add onion, celery, and carrot and sauté for 5–7 minutes until softened.
- Stir in garlic and thyme, cooking for 30 seconds until fragrant.
- Sprinkle in the flour and stir to coat the vegetables. Cook for 1 minute to eliminate raw flour taste.
- Gradually whisk in chicken broth and bring to a gentle boil, stirring until thickened slightly.
- Add shredded chicken and uncooked gnocchi. Simmer for 5–7 minutes until gnocchi are soft and cooked through.
- Reduce heat to low. Stir in half and half and spinach. Let spinach wilt, then season with salt and pepper to taste.
- Serve hot with crusty bread or a sprinkle of Parmesan if desired.
