Description

Old Fashioned Potato Soup is a creamy and comforting dish made with tender potatoes, onions, butter, and milk.


Ingredients

  • 6 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 tablespoons butter
  • 2 cups milk
  • 2 cups water
  • 2 chicken bouillon cubes (or vegetable bouillon for vegetarian version)
  • 1 cup carrots, diced (optional)
  • 1/4 cup flour
  • 1 teaspoon ground black pepper
  • 1 teaspoon thyme
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. In a large saucepan, melt butter over medium heat. Add chopped onion and cook for 5 minutes, until the onion is soft and translucent.
  2. In a separate pot, combine diced potatoes, carrots, water, and chicken bouillon. Bring to a boil and cook for 10 minutes, or until the vegetables are tender. Drain and set aside.
  3. To the cooked onions, add flour and stir constantly to form a paste. Cook for 2 minutes to eliminate the raw flour taste.
  4. Slowly pour in the milk, stirring constantly until smooth. Cook over low heat, stirring often, until warmed through.
  5. Stir in the potato and carrot mixture, parsley, and thyme. Heat through, stirring to combine.
  6. Season with ground black pepper to taste. Serve hot and enjoy!
