Description
Old Fashioned Potato Soup is a creamy and comforting dish made with tender potatoes, onions, butter, and milk.

- 6 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 tablespoons butter
- 2 cups milk
- 2 cups water
- 2 chicken bouillon cubes (or vegetable bouillon for vegetarian version)
- 1 cup carrots, diced (optional)
- 1/4 cup flour
- 1 teaspoon ground black pepper
- 1 teaspoon thyme
- 1 tablespoon fresh parsley (chopped)
Instructions
- In a large saucepan, melt butter over medium heat. Add chopped onion and cook for 5 minutes, until the onion is soft and translucent.
- In a separate pot, combine diced potatoes, carrots, water, and chicken bouillon. Bring to a boil and cook for 10 minutes, or until the vegetables are tender. Drain and set aside.
- To the cooked onions, add flour and stir constantly to form a paste. Cook for 2 minutes to eliminate the raw flour taste.
- Slowly pour in the milk, stirring constantly until smooth. Cook over low heat, stirring often, until warmed through.
- Stir in the potato and carrot mixture, parsley, and thyme. Heat through, stirring to combine.
- Season with ground black pepper to taste. Serve hot and enjoy!
