These are the best old fashioned chicken and dumplings you’ll ever eat! Featuring tender rotisserie chicken, simple homemade broth, and fluffy self rising flour biscuit dumplings.

- 2 lbs rotisserie chicken, diced
- 2 tablespoons unsalted butter
- 1 tablespoon oil (extra virgin olive oil recommended)
- 1 onion, diced
- 16 oz bag (2 cups) baby carrots, diced
- 1/4 cup all-purpose flour
- 8 cups water + 2 tbsp reduced sodium roasted chicken bouillon or 2 32 oz cartons chicken broth (reduced sodium recommended)
- 1/2 tsp salt, add more to taste
- 1/2 tsp black pepper, add more to taste
- 1 tsp Italian seasoning
- 1/4 cup milk (whole recommended)
- 2 cups self-rising flour (250 grams)
- 3/4 cup milk (whole recommended)
- 4 tbsp (1/2 stick) unsalted butter, melted
- 1 tsp Italian seasoning
Instructions
- Dice an onion and cut baby carrots into thirds. Set aside.
- Cut rotisserie chicken into bite-sized pieces. Set aside.
- Gather remaining ingredients for easy access.
- Whisk together 2 cups of self-rising flour and 1 tsp Italian seasoning in a bowl. Set aside 3/4 cup of milk and 4 tbsp unsalted butter for later.
- Add 8 cups of water to a pot, heat over medium, add 2 tbsp chicken bouillon, stir, and bring to a boil. Set aside.
- Add 1 tbsp oil and 2 tbsp butter to a large pot. Cook until butter melts, then add onion and carrots. Cook for 5 minutes until softened.
- Add 1/4 cup all-purpose flour to veggies, stir, then pour in chicken broth and bring to a boil. Cook for 8 minutes until frothy and slightly thickened.
- Stir in diced chicken, add seasonings, and 1/4 cup milk. Mix well.
- Lower heat and let broth simmer while preparing dumplings.
- Melt 1/2 stick of butter, add to flour mixture, pour in 1/2 cup milk, and stir until just combined.
- Drop dumplings into the pot using a small scoop or spoons, leaving space in between.
- Press dumplings down into the broth, cover, and simmer for 15-20 minutes. Test for doneness.
- Stir and let cool for 10-15 minutes before serving.
Notes
- Use reduced sodium broth for a healthier option.
- Adjust seasoning to your preference.
- Store leftovers in the refrigerator for up to 3 days.
