Description

Nobu’s famous crispy rice topped with spicy tuna. This appetizer combines crunchy fried rice with creamy, spicy tuna for a delightful culinary experience.


Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 lb sushi-grade tuna
  • 2 tbsp mayonnaise
  • 1 tbsp sriracha
  • Vegetable oil for frying
  • Green onions for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a pot and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  2. Mix rice vinegar, sugar, and salt in a bowl until dissolved. Stir the vinegar mixture into the cooked rice and let it cool.
  3. Dice the tuna and mix with mayonnaise and sriracha.
  4. Form the cooled rice into rectangular squares. Heat vegetable oil in a pan and fry the rice squares until golden brown.
  5. Top each crispy rice square with spicy tuna mixture. Garnish with chopped green onions and serve.

Notes

  • Use a sushi mat for shaping rice if needed.
  • Adjust spiciness by varying sriracha amount.
  • Make rice in advance for easier preparation.
