Ingredients

  • 500 grams lean buffalo or goat meat (boneless cuts work best)
  • 3 tablespoons mustard oil (can be substituted with vegetable oil)
  • 1 teaspoon turmeric powder (no substitutions necessary)
  • 1 teaspoon cumin powder (use ground or whole cumin seeds)
  • 1 teaspoon coriander powder (ground coriander recommended)
  • 1 teaspoon fenugreek seeds (can be replaced with ground fenugreek)
  • 1 teaspoon red chilli powder (adjust to your spice preference)
  • 1 teaspoon Sichuan pepper (timur) (optional)
  • 2 tablespoons ginger and garlic paste (fresh versions can elevate the taste)
  • 1 tablespoon lime juice (can substitute with lemon juice)
  • to taste teaspoon salt (adjust to your taste)
  • 2 tablespoons chopped fresh coriander (for garnish)
  • 1 medium red onion (for serving)
  • to taste teaspoon dried chilli flakes (optional, for extra heat)

Instructions

  1. Trim any excess fat from the lean buffalo or goat meat and slice it into thin strips, approximately 5 mm thick.
  2. Pat the sliced meat dry, then place it in a mixing bowl. Add mustard oil, turmeric, cumin, coriander, red chilli powder, Sichuan pepper, ginger-garlic paste, salt, and lime juice. Mix well.
  3. Cover the bowl and refrigerate the meat for at least 4 hours or overnight.
  4. Thread the marinated meat onto skewers and hang them in a well-ventilated area to dry for 2-3 days, or use an oven set to 80°C (175°F) for 3-4 hours.
  5. Toast the fenugreek seeds in a pan until fragrant, then crush them.
  6. Heat oil until it smokes and fry the dried meat for 1-2 minutes until crisp.
  7. Mix in the toasted fenugreek and optional dried chili flakes.
  8. Plate the warm Sukuti garnished with chopped fresh coriander and sliced red onion.
