Ingredients

  • 12 sheets Lasagna Noodles (Gluten-free noodles can be used as a substitute.)
  • 3 cups Marinara Sauce (Opt for a high-quality brand for best results.)
  • 2 tablespoons Olive Oil (Can substitute with butter if preferred.)
  • 1 medium Onion (Shallots can be used for a milder flavor.)
  • 2 cloves Garlic (Use fresh minced garlic for the best taste.)
  • 8 ounces Mushrooms (Other vegetables like zucchini can be substituted.)
  • 4 cups Spinach (Fresh or frozen spinach works, but ensure to wilt fresh before use.)
  • 1 teaspoon Dried Thyme (Fresh thyme can be used for a more vibrant flavor.)

  • to taste Pepper (Use fresh cracked pepper for more taste.)
  • 15 ounces Ricotta Cheese (Mascarpone can be used as a substitute.)
  • 2 cups Mozzarella Cheese (Feel free to include additional cheese if desired.)
  • 1/2 cup Parmesan Cheese (Pecorino Romano can be used as an alternative.)

Instructions

  1. Preheat your oven to 375°F (190°C) and generously grease a 9×13-inch baking dish with olive oil or cooking spray.
  2. Cook lasagna noodles in a pot of salted water until al dente, about 8-10 minutes. Drain and set aside.
  3. Sauté onions in a skillet with olive oil over medium heat until translucent, about 3-4 minutes. Add minced garlic and stir until fragrant, about 1 minute.
  4. Add sliced mushrooms, dried thyme, salt, and pepper to the skillet. Sauté until mushrooms are tender, about 5-7 minutes, then stir in spinach until wilted, about 1 minute.
  5. Assemble the lasagna by spreading a thin layer of marinara sauce at the bottom of the prepared dish. Layer noodles, ricotta, the mushroom mixture, and mozzarella, then repeat layers, finishing with noodles and sauce on top.
  6. Top with remaining marinara sauce and sprinkle with mozzarella and Parmesan cheese.
  7. Cover the dish with foil and bake for 25 minutes. Remove the foil and continue baking for another 10-15 minutes until cheese is bubbly and golden brown.
  8. Let the lasagna cool for a few minutes before serving, garnished with fresh basil.
