  • 4 cups Vegetable Broth
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 Onion (medium, diced)
  • 3 cloves Garlic (minced)
  • 16 ounces Assorted Mushrooms (sliced)
  • 1 teaspoon Dried Thyme
  • 1 cup Mozzarella Cheese (shredded)
  • ½ cup Parmesan Cheese (grated)
  • 1 tablespoon Fresh Parsley (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a saucepan, bring the vegetable broth to a gentle boil. Whisk in the polenta, then reduce heat. Stir for about 5–7 minutes until thickened.
  3. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Then add minced garlic and cook for an additional minute.
  4. Stir in sliced mushrooms, dried thyme, salt, and black pepper. Cook until tender, about 8–10 minutes.
  5. Gently fold the cooked polenta into the mushroom mixture until well combined and creamy.
  6. Mix in half of the shredded mozzarella and grated Parmesan until melted into the mixture.
  7. Pour the combination into a greased 9×13-inch baking dish and spread evenly.
  8. Sprinkle the remaining mozzarella and Parmesan cheese over the top.
  9. Bake for 20–25 minutes or until cheese is melted and golden brown.
  10. Let the casserole cool for a few minutes before garnishing with fresh parsley. Serve warm and enjoy!
