Heavenly Mushroom Polenta Casserole for Cozy Family Nights

- 1 cup Polenta
- 4 cups Vegetable Broth
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 Onion (medium, diced)
- 3 cloves Garlic (minced)
- 16 ounces Assorted Mushrooms (sliced)
- 1 teaspoon Dried Thyme
- 1 cup Mozzarella Cheese (shredded)
- ½ cup Parmesan Cheese (grated)
- 1 tablespoon Fresh Parsley (optional garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan, bring the vegetable broth to a gentle boil. Whisk in the polenta, then reduce heat. Stir for about 5–7 minutes until thickened.
- Heat olive oil in a skillet over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Then add minced garlic and cook for an additional minute.
- Stir in sliced mushrooms, dried thyme, salt, and black pepper. Cook until tender, about 8–10 minutes.
- Gently fold the cooked polenta into the mushroom mixture until well combined and creamy.
- Mix in half of the shredded mozzarella and grated Parmesan until melted into the mixture.
- Pour the combination into a greased 9×13-inch baking dish and spread evenly.
- Sprinkle the remaining mozzarella and Parmesan cheese over the top.
- Bake for 20–25 minutes or until cheese is melted and golden brown.
- Let the casserole cool for a few minutes before garnishing with fresh parsley. Serve warm and enjoy!
