  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound (500g) mushrooms, sliced (cremini or chestnut)
  • Salt and pepper, to taste
  • 1/2 teaspoon thyme leaves
  • 1/2 teaspoon chili flakes (optional)
  • 2/3 cup (160ml) double cream
  • 1/2 cup (50g) grated parmesan cheese
  • 1 1/2 cups fresh spinach
  • 1 pound (500g) gnocchi
  • Extra parmesan and parsley, for garnish

Instructions

  1. Cook the Gnocchi: Boil a pot of salted water. Cook gnocchi per package directions (2–3 minutes). When they float, drain and set aside.
  2. Sauté the Aromatics: In a large skillet, heat olive oil and butter over medium heat. Add onion and cook 3–4 minutes until soft. Add garlic and cook another minute.
  3. Cook the Mushrooms: Add mushrooms, salt, pepper, thyme, and chili flakes. Cook 8–10 minutes until golden and moisture has evaporated.
  4. Add Cream and Spinach: Pour in cream and simmer 2 minutes. Add spinach and stir until wilted.
  5. Combine with Gnocchi: Add gnocchi and parmesan. Toss gently to coat. Adjust seasoning as needed.
  6. Serve: Garnish with extra parmesan and fresh parsley. Enjoy warm!

  • Don’t overcrowd mushrooms—let them brown for rich flavor.
