  • 3 tablespoons cold water
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Combine mulberries, sugar, lemon juice, and lemon zest in a saucepan over medium heat. Stir gently while the berries soften. Simmer for 10–12 minutes until thickened. Blend until smooth and strain through a fine sieve. Cool completely.
  2. Sprinkle gelatin over cold water in a small bowl. Let sit for 5–10 minutes until thickened. Warm briefly in the microwave for about 10 seconds until dissolved.
  3. Beat softened cream cheese, powdered sugar, and vanilla extract in a mixing bowl until smooth and creamy.
  4. Stir a few spoonfuls of cooled mulberry puree into melted gelatin. Slowly mix this back into the remaining puree.
  5. Whip cold heavy cream in a separate bowl until soft peaks form.
  6. Fold the mulberry puree into the cream cheese mixture until combined. Gently fold in whipped cream in batches.
  7. Refrigerate the mousse for 30–45 minutes until slightly thickened but still spreadable.
