Description
This mulberry mousse cake filling offers a lighter alternative to buttercream. It combines mulberry puree, lemon, cream cheese, whipped cream, and gelatin for a stable yet airy texture.

- 2 cups fresh or frozen mulberries
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 cup heavy whipping cream, cold
- 2 teaspoons unflavored gelatin
- 3 tablespoons cold water
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Combine mulberries, sugar, lemon juice, and lemon zest in a saucepan over medium heat. Stir gently while the berries soften. Simmer for 10–12 minutes until thickened. Blend until smooth and strain through a fine sieve. Cool completely.
- Sprinkle gelatin over cold water in a small bowl. Let sit for 5–10 minutes until thickened. Warm briefly in the microwave for about 10 seconds until dissolved.
- Beat softened cream cheese, powdered sugar, and vanilla extract in a mixing bowl until smooth and creamy.
- Stir a few spoonfuls of cooled mulberry puree into melted gelatin. Slowly mix this back into the remaining puree.
- Whip cold heavy cream in a separate bowl until soft peaks form.
- Fold the mulberry puree into the cream cheese mixture until combined. Gently fold in whipped cream in batches.
- Refrigerate the mousse for 30–45 minutes until slightly thickened but still spreadable.
Notes
- This filling works well with vanilla, white, and lemon cakes.
- Keep the mousse refrigerated until ready to use.
