- 2 cups bell peppers (mixed colors, chopped)
- 1 cup zucchini (sliced)
- 1 cup eggplant (cubed)
- 1 pound chicken breast (cubed) or 14 ounces tofu (cubed)
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey or maple syrup
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 3 tablespoons extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Additional soy sauce for drizzling
Instructions
- Wash and chop all vegetables into bite-sized pieces.
- In a bowl, mix soy sauce, honey (or maple syrup), garlic powder, basil, and oregano.
- Add chicken or tofu cubes to the marinade and let soak for at least 30 minutes.
- Preheat your oven to 400°F (200°C).
- In a baking dish, drizzle olive oil and add chopped vegetables, lemon juice, salt, and pepper. Toss well to coat.
- After marinating, add the protein to the vegetable mixture in the baking dish.
- Stir everything together and spread evenly in the dish.
- Bake for about 25–30 minutes until golden brown and cooked through.
- Transfer to plates and drizzle with additional soy sauce if desired.
