Ingredients

  • 2 cups bell peppers (mixed colors, chopped)
  • 1 cup zucchini (sliced)
  • 1 cup eggplant (cubed)
  • 1 pound chicken breast (cubed) or 14 ounces tofu (cubed)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3 tablespoons extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Additional soy sauce for drizzling

Instructions

  1. Wash and chop all vegetables into bite-sized pieces.
  2. In a bowl, mix soy sauce, honey (or maple syrup), garlic powder, basil, and oregano.
  3. Add chicken or tofu cubes to the marinade and let soak for at least 30 minutes.
  4. Preheat your oven to 400°F (200°C).
  5. In a baking dish, drizzle olive oil and add chopped vegetables, lemon juice, salt, and pepper. Toss well to coat.
  6. After marinating, add the protein to the vegetable mixture in the baking dish.
  7. Stir everything together and spread evenly in the dish.
  8. Bake for about 25–30 minutes until golden brown and cooked through.
  9. Transfer to plates and drizzle with additional soy sauce if desired.
