- 8 oz shiitake or cremini mushrooms, sliced
- 3 tbsp white or yellow miso paste
- 2 tbsp olive oil
- 2 green onions, chopped (for garnish)
- 1 tbsp toasted sesame seeds (for garnish)
Instructions
- Rinse the rice under cold water until clear. Combine with vegetable broth in a pot; bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until liquid is absorbed.
- While the rice cooks, heat olive oil in a skillet over medium-high heat. Sauté mushrooms for about 5 minutes until golden brown.
- In a bowl, whisk together miso paste and warm water until smooth; stir into sautéed mushrooms.
- Fluff cooked rice and fold it into the mushroom-miso mixture in the skillet until evenly coated.
- Spread the mixture evenly in the skillet and cook undisturbed on medium-high heat for about 5 minutes to create a crispy bottom layer.
- Serve garnished with chopped green onions and toasted sesame seeds.
