- 2 tablespoons white miso paste
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon sesame seeds (for garnish)
- 2 tablespoons chopped green onions (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the miso paste, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until well combined.
- Arrange the eggplant slices in a single layer on a baking sheet lined with parchment paper.
- Brush the miso glaze evenly over the eggplant slices, making sure to coat both sides.
- Bake the eggplant for 15-18 minutes, flipping halfway through, until the eggplant is tender and the glaze is caramelized.
- Remove the Miso Glazed Eggplant from the oven and sprinkle with sesame seeds and chopped green onions.
