  • 2 cups (240g) all-purpose flour
  • ¼ teaspoon salt
  • ¾ cup (120g) mini chocolate chips
  • 12 drops green gel food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened butter and powdered sugar together for about 2 minutes until light and fluffy.
  3. Mix in the peppermint extract and vanilla extract. If using, add green gel food coloring and stir until evenly distributed.
  4. Add the all-purpose flour and salt to the bowl. Mix until the dough just comes together.
  5. Stir in the mini chocolate chips gently until evenly spread throughout the dough.
  6. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them 1 inch apart on the prepared baking sheet.
  7. Bake for 11 to 13 minutes, or until the bottoms are lightly golden.
  8. Allow cookies to cool on the baking sheet for 5 minutes. While still warm, roll each cookie in powdered sugar to coat.
  9. Once cookies are fully cooled, roll them in powdered sugar a second time for a thick, snowy appearance.
