  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour

  • ¼ teaspoon baking powder
  • For the Mint Layer:
  • 2 cups powdered sugar
  • ¼ cup unsalted butter, softened
  • 1 tablespoon milk
  • ½ teaspoon peppermint extract
  • Green food coloring (optional)
  • For the Chocolate Topping:
  • ¾ cup semi-sweet chocolate chips
  • ¼ cup unsalted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a medium mixing bowl, combine the melted butter and sugar, stirring until smooth. Add the eggs and vanilla extract, whisking until the mixture is pale and slightly thickened.
  3. In a separate bowl, mix together the cocoa powder, flour, salt, and baking powder. Slowly add the dry ingredients to the wet mixture, stirring just until combined.
  4. Pour the brownie batter into your prepared pan and spread it evenly. Bake for 20–25 minutes or until a toothpick inserted in the center comes out with moist crumbs. Let the brownies cool completely.
  5. In a mixing bowl, beat the softened butter with the powdered sugar until light and fluffy. Add the milk and peppermint extract, continuing to mix until smooth. If desired, add green food coloring.
  6. Spread the mint mixture evenly over the cooled brownie base. Place the pan in the fridge for 30 minutes to firm up.
  7. In a small saucepan or using a microwave, melt the chocolate chips with the butter, stirring until smooth and glossy. Allow the mixture to cool slightly.
  8. Pour the chocolate over the mint layer and gently tilt the pan to spread it evenly.
  9. Return the pan to the fridge and chill for at least 1 hour before cutting into squares.
