Description

Ingredients

  • ½ cup firmly packed light brown sugar
  • 1 tablespoon milk
  • 1 ½ teaspoons pure vanilla extract
  • 1 large egg, lightly beaten
  • ¾ cup all-purpose flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • ½ cup mini semi-sweet chocolate chips
  • ¼ cup finely chopped pecans
  • 24 ounces cream cheese, at room temperature (3 8-ounce packages)
  • ¾ cup granulated sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • ⅓ cup heavy cream
  • ½ cup caramel sauce
  • 4 ounces semi-sweet chocolate, melted

Instructions

  1. Preheat your oven to 375ºF. Line 24 muffin cups with grease-proof paper liners.
  2. Beat the softened butter, light brown sugar, milk, and vanilla extract until light and fluffy. Add the beaten egg and mix.
  3. Whisk together the flour, fine sea salt, and baking soda. Gradually add to the butter mixture until just combined.
  4. Fold in the chocolate chips and pecans.
  5. Place about 2 teaspoons of cookie dough into each muffin cup.
  6. Bake for 8-9 minutes. Cool on a rack for 10 minutes. Lower the oven temperature to 350ºF.
  7. Beat the cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well. Mix in heavy cream.
  8. Spoon about 3 tablespoons of cheesecake filling over each cookie crust.
  9. Bake for 20-23 minutes until the filling is set but jiggly.
  10. Cool completely at room temperature.
  11. Refrigerate for at least 4 hours before serving.
  12. Drizzle with caramel sauce and melted chocolate before serving.
