- 1 cup grits (preferably stone-ground)
- 4 cups water (for cooking grits)
- 1 cup cheddar cheese (shredded)
- 2 tablespoons butter
- salt to taste
- 1 pound shrimp (peeled and deveined)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper (optional)
- 1 tablespoon lemon juice
- salt to taste
Instructions
- In a saucepan, bring water to a boil. Add grits and salt, reduce heat, and simmer until thickened.
- Stir in butter and cheddar cheese until melted and smooth.
- In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add shrimp, paprika, cayenne pepper, lemon juice, and salt. Cook until shrimp are pink and cooked through.
- Spoon grits onto plates and top with shrimp mixture. Serve immediately.
