Ingredients

  • 16 mini meatballs
  • 1 cup cherry tomatoes
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 zucchini
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut bell peppers into square pieces and slice zucchini into thick coins. Halve cherry tomatoes if large.
  3. If using frozen meatballs, make sure they are fully thawed before assembling.
  4. On short skewers or toothpicks, thread 1 meatball, 1 piece of zucchini, 1 bell pepper piece, and 1 cherry tomato. Repeat layering if space allows.
  5. Place skewers on the baking sheet. Drizzle with olive oil and sprinkle Italian seasoning, salt, and pepper.
  6. Bake for 12–15 minutes or until veggies are roasted and meatballs are heated through.
  7. Serve warm and enjoy immediately.
