These Easy Mini Meatball Skewers are the perfect quick appetizer or party snack, made with juicy meatballs, vibrant vegetables, and baked to perfection.

- 16 mini meatballs
- 1 cup cherry tomatoes
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut bell peppers into square pieces and slice zucchini into thick coins. Halve cherry tomatoes if large.
- If using frozen meatballs, make sure they are fully thawed before assembling.
- On short skewers or toothpicks, thread 1 meatball, 1 piece of zucchini, 1 bell pepper piece, and 1 cherry tomato. Repeat layering if space allows.
- Place skewers on the baking sheet. Drizzle with olive oil and sprinkle Italian seasoning, salt, and pepper.
- Bake for 12–15 minutes or until veggies are roasted and meatballs are heated through.
- Serve warm and enjoy immediately.
