Description

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/4 cup crushed graham crackers
  • 1/4 cup melted butter
  • Red and green sprinkles for decoration

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a mixing bowl, beat softened cream cheese and sugar until smooth.
  3. Mix in vanilla extract and sour cream until well combined.
  4. Add eggs one at a time, mixing after each addition.
  5. In another bowl, combine crushed graham crackers and melted butter to form the crust.
  6. Press crust mixture firmly into the bottom of mini cupcake liners.
  7. Pour cheesecake batter over crust until about ¾ full.
  8. Bake for 20 minutes or until centers are set but still slightly jiggly.
  9. Let cool completely, then refrigerate for at least 2 hours.
  10. Top with festive red and green sprinkles before serving.
