- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 large eggs
- 1/4 cup crushed graham crackers
- 1/4 cup melted butter
- Red and green sprinkles for decoration
Instructions
- Preheat oven to 325°F (160°C).
- In a mixing bowl, beat softened cream cheese and sugar until smooth.
- Mix in vanilla extract and sour cream until well combined.
- Add eggs one at a time, mixing after each addition.
- In another bowl, combine crushed graham crackers and melted butter to form the crust.
- Press crust mixture firmly into the bottom of mini cupcake liners.
- Pour cheesecake batter over crust until about ¾ full.
- Bake for 20 minutes or until centers are set but still slightly jiggly.
- Let cool completely, then refrigerate for at least 2 hours.
- Top with festive red and green sprinkles before serving.
