Description

  • 4 small apples, diced
  • 1 tablespoon butter
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 sheet puff pastry dough, thawed
  • 1 egg (for egg wash)
  • 2 teaspoons powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 425°F (220°C). Lightly spray 9 cups of a muffin tin with oil.
  2. In a medium skillet, sauté diced apples, butter, brown sugar, and cinnamon over medium-high heat for 2–3 minutes until the apples begin to release juices. Cover, reduce heat to medium, and cook for 10 minutes. Uncover and cook for an additional 2-3 minutes until the liquid evaporates.
  3. Roll out the puff pastry on a lightly floured surface to about 11×11 inches. Cut the dough into 9 squares using a sharp knife or pizza cutter.
  4. Press each puff pastry square into the muffin tin cups, stretching the dough slightly to fit. Make sure the dough hangs over the edges of the tin.
  5. Fill each pastry cup with about 3/4 full of the cooked apple mixture.
  6. Fold the edges of the pastry over the top of the apples to form a rustic shape. Leave a couple of air vents and pinch the dough to seal.
  7. Brush the tops of the pies with the egg wash and bake for 20-25 minutes until golden brown and flaky.
  8. Let the pies cool for 8-10 minutes before transferring them to a wire rack. Dust with powdered sugar before serving.
