- 200 g Boursin Garlic & Fine Herbs Cheese
- 200 ml Heavy Cream
- 2 cloves Garlic (minced)
- 200 g Cherry Tomatoes (halved)
- 1 tablespoon Olive Oil
- 50 g Parmesan Cheese (grated)
- 2 tablespoons Fresh Parsley or Basil (chopped)
Instructions
- Preheat the oven to 400°F (200°C).
- Boil rigatoni in a large pot of salted water until al dente, about 8-10 minutes. Reserve ¼ cup of the pasta water before draining.
- Prepare the baking dish by placing the Boursin cheese in the center, surrounded by halved cherry tomatoes and minced garlic. Drizzle with olive oil.
- Roast the mixture in the oven for about 20 minutes until the cheese softens and the tomatoes blister.
- Combine the melted cheese, roasted tomatoes, and garlic until creamy. Stir in the heavy cream and reserved pasta water as needed.
- Mix in the cooked rigatoni, ensuring each piece is coated with the sauce.
- Top with grated Parmesan cheese and return to the oven for an additional 10-15 minutes until bubbly and golden.
- Garnish with fresh herbs and serve warm.
