  • 1 tablespoon Olive Oil
  • 50 g Parmesan Cheese (grated)
  • 2 tablespoons Fresh Parsley or Basil (chopped)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Boil rigatoni in a large pot of salted water until al dente, about 8-10 minutes. Reserve ¼ cup of the pasta water before draining.
  3. Prepare the baking dish by placing the Boursin cheese in the center, surrounded by halved cherry tomatoes and minced garlic. Drizzle with olive oil.
  4. Roast the mixture in the oven for about 20 minutes until the cheese softens and the tomatoes blister.
  5. Combine the melted cheese, roasted tomatoes, and garlic until creamy. Stir in the heavy cream and reserved pasta water as needed.
  6. Mix in the cooked rigatoni, ensuring each piece is coated with the sauce.
  7. Top with grated Parmesan cheese and return to the oven for an additional 10-15 minutes until bubbly and golden.
