Description

Ingredients
- Meyer Lemons (about 2-3 lemons for zest and juice)
- Sugar (1 cup)
- Eggs (4 large, beaten)
- Butter (1/2 cup, unsalted)
- Pinch of Salt
Instructions
- Prepare the Meyer lemons: zest and juice the lemons.
- In a heatproof bowl, whisk the eggs and sugar until smooth, then stir in the lemon zest and juice.
- Place the bowl over a simmering pot of water (double boiler) and whisk constantly until the mixture thickens, about 8-10 minutes.
- Once the curd has thickened, remove from heat and stir in the butter until it melts completely.
- Strain the curd through a fine-mesh sieve to remove the zest and any solid bits.
- Allow the curd to cool to room temperature, then store in an airtight container in the refrigerator.
