Description

One Pot Mexican Taco Pasta Recipe combines seasoned beef, creamy cheese, and pasta in a flavorful dish.


Ingredients

  • ½ lb small pasta shells
  • 2 cups Cheddar cheese (shredded)
  • 4 oz Velveeta cheese (cubed)
  • 1 lb lean ground beef
  • 1 tablespoon unsalted butter
  • 1 tablespoon garlic (minced)
  • 2 tbs taco seasoning
  • 1 tbs Worcestershire
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 10 oz Rotel Tomatoes
  • 2 tbs tomato paste
  • 1 tsp parsley (chopped for garnish)

Instructions

  1. Add butter to the bottom of the Dutch oven over medium heat.
  2. Once melted, add the ground beef and chopped onion to the pot.
  3. Cook the beef until no pink remains, then drain any excess grease.
  4. Add garlic to the mixture, and cook for 60 seconds, or until fragrant.
  5. Add Worcestershire, chicken broth, heavy cream, taco seasoning, tomato paste, and Rotel tomatoes to the pot. Stir until thoroughly combined.
  6. Bring the mixture to a gentle boil, then add the pasta to the pot, stirring frequently to prevent sticking.
  7. Once the pasta is done cooking (about 9 minutes), turn heat down to low.
  8. Slowly add the shredded cheddar cheese and cubed Velveeta to the mixture.
  9. Stir frequently to melt and allow the pasta to soak up the sauce.
