Instructions
- Preheat the Oven: Set your oven to 220°C (200°C fan-forced).
- Cook the Pasta: Boil a pot of water and cook the macaroni until tender; drain and set aside.
- Sauté the Chorizo: Heat vegetable oil in a large ovenproof skillet and cook chorizo until lightly golden.
- Make the Cheese Sauce: In the same skillet, melt the butter. Whisk in flour, onion powder, and garlic powder and cook for 1 minute.
- Whisk in the Milk: Gradually add full cream milk, stirring continuously until thickened, about 6 minutes.
- Mix in the Flavors: Stir in chipotle sauce and 1 cup of Mexican cheese until smooth. Season to taste.
- Combine the Ingredients: Add cooked macaroni and sautéed chorizo to the cheese sauce. Top with cherry tomatoes and corn chips.
- Bake to Perfection: Place in oven and bake for about 15 minutes until cheese is golden and bubbly.
- Garnish and Serve: Garnish with pico de gallo and cilantro before serving. Enjoy with extra corn chips!
