Instructions

  1. Preheat the Oven: Set your oven to 220°C (200°C fan-forced).
  2. Cook the Pasta: Boil a pot of water and cook the macaroni until tender; drain and set aside.
  3. Sauté the Chorizo: Heat vegetable oil in a large ovenproof skillet and cook chorizo until lightly golden.
  4. Make the Cheese Sauce: In the same skillet, melt the butter. Whisk in flour, onion powder, and garlic powder and cook for 1 minute.
  5. Whisk in the Milk: Gradually add full cream milk, stirring continuously until thickened, about 6 minutes.
  6. Mix in the Flavors: Stir in chipotle sauce and 1 cup of Mexican cheese until smooth. Season to taste.
  7. Combine the Ingredients: Add cooked macaroni and sautéed chorizo to the cheese sauce. Top with cherry tomatoes and corn chips.
