Description

Delightful quesadillas filled with mozzarella, feta, fresh vegetables, and Mediterranean flavors.


Ingredients

  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 1 cup baby spinach, chopped
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup pitted Kalamata olives, sliced
  • 1 bell pepper, thinly sliced (red or yellow)
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • Olive oil, for cooking
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Chop the spinach, sun-dried tomatoes, olives, and bell pepper. Set aside.
  2. In a large mixing bowl, combine the mozzarella cheese, feta cheese, chopped spinach, sun-dried tomatoes, olives, bell pepper, oregano, and garlic powder. Mix well.
  3. In a large skillet, heat a small amount of olive oil over medium heat.
  4. Place one tortilla in the skillet. Spoon a generous amount of the filling onto one half of the tortilla, leaving space around the edges.
  5. Fold the tortilla over to cover the filling. Cook for about 3-4 minutes or until the bottom side is golden brown and the cheese begins to melt.
  6. Carefully flip the quesadilla using a spatula. Cook the other side for another 3-4 minutes until golden brown and crispy.
  7. Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and filling.
  8. Cut each quesadilla into wedges and arrange them on a serving platter. Garnish with fresh basil or parsley if desired.

  • Adjust the amount of cheese to your preference.
  • Feel free to add other vegetables like mushrooms or zucchini.
  • Serve with your favorite dipping sauce.
