Description

A delicious Mediterranean-inspired grilled cheese sandwich packed with spinach, sun-dried tomatoes, and a mix of feta and mozzarella cheeses.


Ingredients

  • 4 slices sourdough bread
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup feta cheese
  • 1/2 cup mozzarella cheese
  • 2 tbsp olive oil or butter
  • 1 clove garlic, minced
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a pan, add garlic and spinach, and cook until wilted.
  2. Stir in sun-dried tomatoes and feta cheese with the spinach.
  3. Layer the mixture onto bread, add mozzarella, and top with another slice.
  4. Cook on medium heat until bread is golden and cheese melts.
  5. Slice and serve warm.
