A delicious Mediterranean-inspired grilled cheese sandwich packed with spinach, sun-dried tomatoes, and a mix of feta and mozzarella cheeses.
Ingredients

- 4 slices sourdough bread
- 1 cup fresh spinach
- 1/2 cup sun-dried tomatoes
- 1/2 cup feta cheese
- 1/2 cup mozzarella cheese
- 2 tbsp olive oil or butter
- 1 clove garlic, minced
- Salt & pepper to taste
Instructions
- Heat olive oil in a pan, add garlic and spinach, and cook until wilted.
- Stir in sun-dried tomatoes and feta cheese with the spinach.
- Layer the mixture onto bread, add mozzarella, and top with another slice.
- Cook on medium heat until bread is golden and cheese melts.
- Slice and serve warm.
