Mediterranean Chicken Lettuce Wraps with Creamy Garlic Sauce


Ingredients

  • 1 lb cooked chicken breast or thighs, chopped
  • 8 large romaine or butter lettuce leaves
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup kalamata olives, sliced (optional)
  • 1 avocado, diced
  • Salt & pepper to taste
  • ½ cup plain Greek yogurt
  • 1 garlic clove, minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt to taste

Instructions

  1. Make the garlic sauce by mixing all sauce ingredients in a bowl. Set aside.
  2. Prepare filling: In a bowl, combine chopped chicken, tomatoes, cucumber, onion, olives, and avocado. Season with salt and pepper.
  3. Assemble wraps: Spoon filling into lettuce leaves and drizzle generously with garlic yogurt sauce.
  4. Serve immediately, or store filling and lettuce separately for meal prep.
