  • 2 large carrots, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, sliced into half moons
  • 1 red onion, thickly sliced
  • 1½ cups baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley or herbs for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil.
  2. Chop your vegetables into even-sized pieces. Halve the baby potatoes, slice the onions, and cut the sausage into 1- to 2-inch rounds if using raw sausage links.
  3. Toss the vegetables in olive oil, garlic powder, paprika, salt, and pepper. Spread everything in a single layer on the sheet pan.
  4. Add the sausage to the sheet. If it’s raw, place it evenly among the vegetables. If pre-cooked, add it after 15 minutes.
  5. Roast for 25–30 minutes, flipping once halfway through. The vegetables should be tender and slightly caramelized, and the sausage browned and fully cooked.
  6. Serve hot, garnished with fresh herbs or a sprinkle of grated cheese if desired.
