- 600 g pork sausage meat
- 1 medium onion, very finely diced
- 2 cloves garlic, minced
- 2 tbsp fresh sage, finely chopped
- 1 tbsp fresh thyme leaves, finely chopped
- 60 g fresh breadcrumbs
- 1 tsp Dijon mustard
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- a tiny pinch nutmeg (optional)
- 2 x 320 g sheets all-butter puff pastry, ready-rolled
- 1 large egg, beaten
- 1 tsp milk or water (optional)
- 1 tbsp sesame seeds or poppy seeds (optional)
Instructions
- Start by finely dicing the onion and mincing the garlic.
- Next, chop the fresh sage and thyme.
- In a large mixing bowl, combine the pork sausage meat, onion, garlic, sage, thyme, breadcrumbs, Dijon mustard, sea salt, black pepper, and nutmeg.
- Mix thoroughly but gently until all ingredients are evenly combined.
- If you’d like, taste-test the filling for seasoning.
- Lightly flour your work surface and unroll the puff pastry sheets.
- Divide the sausage filling into four equal portions and roll each into a cylinder shape.
- Lay one sausage filling along one half of a pastry sheet and moisten the edges with the beaten egg.
- Fold the pastry over the filling and press down to seal the edges well.
- Crimp the edges with a fork.
- Cut the logs into individual sausage rolls, about 3 inches long.
- Transfer the rolls onto lined baking trays, leaving space between each.
- Brush the tops of each roll with the egg wash.
- If desired, sprinkle sesame or poppy seeds on top.
- Preheat the oven to 200°C (180°C fan/Gas Mark 6).
- Bake for 20-25 minutes until golden brown and cooked through.
- Let them cool slightly before serving.
