Mary Berry’s Best Beef Sausage Rolls for Ultimate Comfort Food.


Ingredients

  • 600 g pork sausage meat
  • 1 medium onion, very finely diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh sage, finely chopped
  • 1 tbsp fresh thyme leaves, finely chopped
  • 60 g fresh breadcrumbs
  • 1 tsp Dijon mustard
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • a tiny pinch nutmeg (optional)
  • 2 x 320 g sheets all-butter puff pastry, ready-rolled
  • 1 large egg, beaten
  • 1 tsp milk or water (optional)
  • 1 tbsp sesame seeds or poppy seeds (optional)

Instructions

  1. Start by finely dicing the onion and mincing the garlic.
  2. Next, chop the fresh sage and thyme.
  3. In a large mixing bowl, combine the pork sausage meat, onion, garlic, sage, thyme, breadcrumbs, Dijon mustard, sea salt, black pepper, and nutmeg.
  4. Mix thoroughly but gently until all ingredients are evenly combined.
  5. If you’d like, taste-test the filling for seasoning.
  6. Lightly flour your work surface and unroll the puff pastry sheets.
  7. Divide the sausage filling into four equal portions and roll each into a cylinder shape.
  8. Lay one sausage filling along one half of a pastry sheet and moisten the edges with the beaten egg.
  9. Fold the pastry over the filling and press down to seal the edges well.
  10. Crimp the edges with a fork.
  11. Cut the logs into individual sausage rolls, about 3 inches long.
  12. Transfer the rolls onto lined baking trays, leaving space between each.
  13. Brush the tops of each roll with the egg wash.
  14. If desired, sprinkle sesame or poppy seeds on top.
  15. Preheat the oven to 200°C (180°C fan/Gas Mark 6).
  16. Bake for 20-25 minutes until golden brown and cooked through.
  17. Let them cool slightly before serving.
