A vibrant, savory stir-fry featuring juicy chicken thighs and crunchy cashews coated in a glossy, garlic-infused soy and oyster sauce.


Ingredients

  • 500g (1 lb) chicken thigh, chopped
  • 2 tbsp peanut oil
  • 2 garlic cloves, minced
  • 1/2 onion, chopped
  • 1 green bell pepper, chopped
  • 3/4 cup roasted cashews
  • 6 tbsp water
  • 1 tbsp cornstarch
  • 3 tbsp soy sauce
  • 1.5 tbsp Chinese wine
  • 3 tbsp oyster sauce
  • 2 tsp sesame oil
  • white pepper

Instructions

  1. Mix cornstarch and soy sauce until smooth; add rest of sauce ingredients.
  2. Coat chicken with 2 tbsp sauce; marinate 10 mins.
  3. Heat oil on high. Sauté garlic and onion (1 min).
  4. Add chicken (cook 2 mins). Add pepper (cook 1 min).
  5. Add remaining sauce and water. Simmer until thick (1 min).
  6. Stir in cashews off the heat. Serve.
