Ingredients

- 500g (1 lb) chicken thigh, chopped
- 2 tbsp peanut oil
- 2 garlic cloves, minced
- 1/2 onion, chopped
- 1 green bell pepper, chopped
- 3/4 cup roasted cashews
- 6 tbsp water
- 1 tbsp cornstarch
- 3 tbsp soy sauce
- 1.5 tbsp Chinese wine
- 3 tbsp oyster sauce
- 2 tsp sesame oil
- white pepper
Instructions
- Mix cornstarch and soy sauce until smooth; add rest of sauce ingredients.
- Coat chicken with 2 tbsp sauce; marinate 10 mins.
- Heat oil on high. Sauté garlic and onion (1 min).
- Add chicken (cook 2 mins). Add pepper (cook 1 min).
- Add remaining sauce and water. Simmer until thick (1 min).
- Stir in cashews off the heat. Serve.
