Description

A traditional method for turning leftover citrus rinds into sweet, jewel-like confectionary perfect for holiday baking or chocolate dipping.


Ingredients

  • 3 large oranges (or mix of citrus)
  • 2 cups sugar
  • 1 cup water
  • Extra sugar for coating

Instructions

  1. Score peel into quarters and remove from fruit. Slice into strips.
  2. Boil peels in water for 15 mins; drain. Repeat 2 more times.
  3. Dissolve sugar in fresh water; bring to boil.
  4. Simmer peels in syrup for 45-60 mins until translucent.
  5. Remove with slotted spoon; toss in sugar.
  6. Dry on rack for 1-2 days.
