  • ½ cup sun-dried tomatoes (in oil), drained and chopped
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan
  • 2 cups fresh baby spinach
  • Optional garnish: red pepper flakes, fresh basil

Instructions

  1. Season chicken breasts with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken 5 minutes per side until golden. Remove and set aside.
