- 4 boneless, skinless chicken breasts
- Salt, pepper, and paprika (for seasoning)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- ½ cup sun-dried tomatoes (in oil), drained and chopped
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated parmesan
- 2 cups fresh baby spinach
- Optional garnish: red pepper flakes, fresh basil
Instructions
- Season chicken breasts with salt, pepper, and paprika.
- Heat olive oil in a large skillet over medium heat. Sear chicken 5 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes.
- Add cream, chicken broth, Italian seasoning, and parmesan. Simmer until slightly thickened.
- Stir in spinach and cook until wilted.
- Return chicken to skillet and simmer 5–10 minutes until fully cooked.
- Garnish with red pepper flakes or fresh basil before serving.
