- 2 cups cooked shredded chicken
- 1 pound potato gnocchi
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 1 tablespoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- Salt and black pepper, to taste
- 1 tablespoon olive oil or butter (for sautéing)
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add onions and garlic; sauté until soft and fragrant, about 3-4 minutes.
- Add chicken broth, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Bring to a gentle simmer for 5-7 minutes.
- Add shredded chicken and gnocchi to the pot. Simmer for 4-5 minutes until gnocchi is tender.
- Stir in heavy cream and parmesan cheese. Let it cook for another 3-4 minutes until the soup thickens slightly. Season with salt and pepper to taste.
- Add spinach and stir until just wilted.
- Serve hot with extra parmesan and a sprinkle of black pepper or fresh herbs.
