- 1 lb Darigold Medium White Cheddar Cheese
- 1/4 cup chopped parsley
- 1 cup olives
- 1–3 cloves garlic
- 1/4 cup olive oil
- 1 tsp crushed red pepper flakes
- 1 cup rucola (arugula) leaves
Instructions
- Mix 1/4 cup parsley, 1-3 crushed garlic cloves, 1 tsp red pepper flakes, and 1/4 cup olive oil in a bowl.
- Cube the white cheddar cheese into bite-sized pieces and add it to the bowl with the marinade.
- Mix in the olives and stir everything together until the cheese is well-coated with the marinade.
- Arrange the rucola leaves on a plate and top them with the cheese and olive mixture.
- Let the marinated cheese sit for at least 30 minutes before serving, or longer for more flavor integration.
