Delicious Mango Coconut Bars for a Tropical Treat at Home

- 1.5 cups all-purpose flour
- 0.5 cups sugar
- 0.75 cups melted butter
- 1.5 cups diced mango
- 2 large eggs
- 0.5 cups sweetened condensed milk
- 0.5 cups shredded coconut
- 0.25 cups shredded coconut
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Mix together 1 ½ cups all-purpose flour, ½ cup sugar, and ¾ cup melted butter until crumbly. Press this mixture evenly into the bottom.
- Bake for 10-12 minutes, or until lightly golden.
- Puree 1 ½ cups diced mango in a food processor until smooth.
- Whisk together 2 large eggs, ½ cup sweetened condensed milk, and the mango puree in a bowl. Stir in ½ cup shredded coconut.
- Pour the mango mixture over the baked crust and sprinkle an additional ¼ cup shredded coconut on top.
- Bake for 20-25 minutes until set and the coconut topping is golden brown.
- Cool completely in the pan before slicing into bars.
