Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 tsp vanilla extract
- 1 cup mixed berries (fresh or frozen)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a bowl, mix the all-purpose flour, almond flour, baking powder, baking soda, and salt.
- In another bowl, whisk honey, applesauce, coconut oil, eggs, and vanilla.
- Combine the wet and dry ingredients, stirring just until mixed.
- Gently fold in the berries.
- Divide the batter evenly into the muffin cups.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before transferring to a wire rack.
