Description

Deliciously moist and fluffy strawberry protein muffins that are low in carbs and high in protein, perfect for a healthy snack or breakfast.


Ingredients

  • 1 cup almond flour
  • 1/2 cup protein powder (vanilla or strawberry)
  • 1/4 cup erythritol
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease muffin tin or line with muffin liners.
  3. In a bowl, whisk together almond flour, protein powder, erythritol, baking powder, and salt.
  4. In another bowl, beat eggs, then add almond milk and vanilla extract.
  5. Combine wet and dry mixtures, stirring gently until just combined.
  6. Fold in chopped strawberries.
  7. Spoon batter into muffin tin, filling each cup 3/4 full.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Cool in tin for 5 minutes, then transfer to wire rack.
