Ingredients

- 1 cup almond flour
- 1/2 cup protein powder (vanilla or strawberry)
- 1/4 cup erythritol
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
Instructions
- Preheat oven to 350°F (175°C).
- Grease muffin tin or line with muffin liners.
- In a bowl, whisk together almond flour, protein powder, erythritol, baking powder, and salt.
- In another bowl, beat eggs, then add almond milk and vanilla extract.
- Combine wet and dry mixtures, stirring gently until just combined.
- Fold in chopped strawberries.
- Spoon batter into muffin tin, filling each cup 3/4 full.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Cool in tin for 5 minutes, then transfer to wire rack.
