Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 zucchini (sliced)
  • 1 cup cherry tomatoes (halved)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup fresh basil (chopped)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the ground turkey to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  3. Add the chopped onion and minced garlic to the skillet. Sauté for about 2-3 minutes until the onion is translucent.
  4. Add the chopped bell pepper and sliced zucchini. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.
  5. Stir in the halved cherry tomatoes, Italian seasoning, salt, and pepper. Cook for another 3-4 minutes, until the tomatoes are softened and the flavors meld together.
  6. Remove the skillet from heat and stir in the chopped fresh basil.
  7. If desired, sprinkle with grated Parmesan cheese before serving.
  8. Serve warm, either on its own or over a bed of greens for a complete meal.
