Cheesy low carb taco stuffed peppers made with ground meat, cottage cheese, and bold spices for an easy high-protein dinner.

- 4 large bell peppers
- 1 pound ground beef or turkey
- 1 cup full-fat cottage cheese
- 1/2 cup shredded cheddar or Mexican-blend cheese divided
- 1/2 cup diced onion
- 2 cloves garlic minced
- 2 tablespoons tomato paste
- 1 tablespoon olive oil
- 1 1/2 tablespoons taco seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro or parsley
Instructions
- Preheat oven to 375°F.
- Brown onion and garlic in olive oil.
- Cook ground meat until browned.
- Stir in tomato paste and seasonings.
- Mix in cottage cheese and half the shredded cheese.
- Fill peppers and top with remaining cheese.
- Bake covered for 30 minutes, uncover and bake for 10 to 15 minutes.
