Instructions
- Wash and slice eggplant into ½-inch rounds.
- Sprinkle salt on eggplant and let sit for 30 minutes.
- Rinse and dry the eggplant slices.
- Mix olive oil, garlic powder, onion powder, smoked paprika, rosemary, salt, and pepper in a bowl.
- Toss eggplant in the mixture until coated.
