Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1/2 cup whole milk, warmed
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup unsalted butter, softened (for filling)
  • 1 cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 1/2 cup crushed Lotus Biscoff cookies
  • 1/2 cup cream cheese, softened (for glaze)
  • 1/4 cup unsalted butter, softened (for glaze)
  • 1/2 cup powdered sugar
  • 1/4 cup Biscoff spread
  • 12 tablespoons milk (to adjust glaze consistency)

Instructions

  1. In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour and salt.
  3. In a separate bowl, combine the melted butter and eggs. Add the yeast mixture once it is frothy.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
  6. In a medium bowl, mix the softened butter, brown sugar, ground cinnamon, and crushed Biscoff cookies until well combined.
  7. Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately 16×12 inches.
  8. Evenly spread the cinnamon filling over the rolled-out dough, leaving a small border around the edges.
  9. Starting from the long edge, tightly roll the dough into a log. Pinch the seam to seal.
  10. Using a sharp knife or dental floss, cut the log into 12 equal pieces and place them in a greased baking dish, leaving space between each roll for rising.
  11. Cover the rolls with a towel and let them rise for another 30 minutes until puffy.
  12. Preheat your oven to 350°F (175°C).
  13. Bake the rolls in the preheated oven for 25-30 minutes or until golden brown.
  14. In a mixing bowl, beat together the cream cheese, softened butter, powdered sugar, and Biscoff spread until smooth. Add milk as needed to reach your desired consistency.
  15. Once the cinnamon rolls are done baking, allow them to cool slightly before drizzling the Biscoff glaze over the top.
  16. Enjoy warm, and watch them disappear!
