Delicious Lotus Biscoff Cinnamon Rolls with a sweet glaze.

- 4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1 teaspoon salt
- 1/2 cup whole milk, warmed
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup unsalted butter, softened (for filling)
- 1 cup brown sugar, packed
- 2 tablespoons ground cinnamon
- 1/2 cup crushed Lotus Biscoff cookies
- 1/2 cup cream cheese, softened (for glaze)
- 1/4 cup unsalted butter, softened (for glaze)
- 1/2 cup powdered sugar
- 1/4 cup Biscoff spread
- 1–2 tablespoons milk (to adjust glaze consistency)
Instructions
- In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until frothy.
- In a large mixing bowl, whisk together the flour and salt.
- In a separate bowl, combine the melted butter and eggs. Add the yeast mixture once it is frothy.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
- In a medium bowl, mix the softened butter, brown sugar, ground cinnamon, and crushed Biscoff cookies until well combined.
- Once the dough has risen, punch it down and roll it out on a floured surface into a rectangle approximately 16×12 inches.
- Evenly spread the cinnamon filling over the rolled-out dough, leaving a small border around the edges.
- Starting from the long edge, tightly roll the dough into a log. Pinch the seam to seal.
- Using a sharp knife or dental floss, cut the log into 12 equal pieces and place them in a greased baking dish, leaving space between each roll for rising.
- Cover the rolls with a towel and let them rise for another 30 minutes until puffy.
- Preheat your oven to 350°F (175°C).
- Bake the rolls in the preheated oven for 25-30 minutes or until golden brown.
- In a mixing bowl, beat together the cream cheese, softened butter, powdered sugar, and Biscoff spread until smooth. Add milk as needed to reach your desired consistency.
- Once the cinnamon rolls are done baking, allow them to cool slightly before drizzling the Biscoff glaze over the top.
- Enjoy warm, and watch them disappear!
Notes
- Whole wheat flour can be used for a healthier option.
- Coconut oil can be substituted for a dairy-free version.
- Nutella or any chocolate spread can be used for a different flavor.
