- 1/2 cup Italian dressing
- 1/3 cup ranch dressing
- 4 thin-sliced chicken breasts
- 2 tablespoons vegetable oil
- 4 ounces provolone cheese, shredded
- 1/3 cup freshly grated Parmesan cheese
- 1/3 cup ranch dressing
- 1/2 cup panko breadcrumbs
- 1/4 cup freshly grated Parmesan cheese
- 1 1/2 teaspoons garlic powder
- 3 tablespoons salted butter, melted
Instructions
- In a large bowl, whisk together the Italian dressing and ranch dressing. Add the chicken breasts and coat them thoroughly. Cover and let marinate in the fridge for at least 30 minutes or up to overnight.
- In a medium bowl, mix together the provolone cheese, Parmesan cheese, and ranch dressing. Microwave in 30-second intervals, stirring each time until the cheese is mostly melted. Set aside.
- In another bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, and melted butter. Stir until well coated.
- Preheat the broiler on low and heat a large, oven-safe skillet over medium heat. Add vegetable oil to the skillet.
- Remove excess marinade from the chicken and add it to the skillet. Cook for about 5 minutes on each side until lightly browned.
- Top each piece of chicken with the cheese sauce, followed by the breadcrumb mixture.
- Broil the chicken for an additional 5-10 minutes until the breadcrumbs are golden brown and the chicken reaches an internal temperature of 165°F. Serve immediately.
