Ingredients

  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved

  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Wash the Logan cucumbers thoroughly and slice them into thin, even rounds.
  2. Peel and slice the red onion into fine strips.
  3. Cut the cherry tomatoes in halves.
  4. Place the sliced Logan cucumbers, red onion, and halved cherry tomatoes in a large mixing bowl.
  5. In a separate small bowl, combine olive oil, apple cider vinegar, honey, salt, and pepper. Whisk until well combined.
  6. Pour the dressing over the vegetables in the large bowl.
  7. Toss gently to coat all the ingredients evenly.
  8. Sprinkle fresh dill on top.
