- 4 large russet potatoes
- 1 pound ground beef
- 1 tablespoon taco seasoning
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup corn (canned or frozen)
- 1 cup diced tomatoes (fresh or canned)
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup sliced black olives
- ¼ cup chopped green onions
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Scrub the potatoes, prick with a fork, coat with olive oil, salt, and pepper. Bake for 45-60 minutes until tender.
- In a skillet over medium heat, brown the ground beef and drain excess fat. Add taco seasoning and mix well.
- In a mixing bowl, combine black beans, corn, diced tomatoes, salt, and pepper.
- Once cooled slightly, cut open each potato lengthwise and fluff the insides with a fork. Layer in the beef mix followed by the bean mixture.
- Top with lettuce, cheddar cheese, sour cream, olives, and green onions.
- Serve immediately and let everyone personalize their bowls.
