Description

  • 1/4 cup cooked Turkey bacon, crumbled
  • 2 green onions, finely chopped
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup breadcrumbs
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix cold mashed potatoes, shredded cheddar cheese, crumbled turkey bacon, and chopped green onions.
  2. Scoop about a tablespoon of the mixture and roll it between your palms to form a tight ball, about 1.5 inches in diameter.
  3. Roll each potato ball lightly in flour, then dip it in the beaten egg, ensuring it’s fully coated.
  4. Coat the egg-dipped ball thoroughly with breadcrumbs.
  5. Heat oil in a deep frying pan or heavy pot to 350°F (175°C).
  6. Carefully lower 4-5 potato balls at a time into the hot oil, avoiding overcrowding the pan.
  7. Fry for 2-3 minutes, turning occasionally, until the balls are golden brown and crispy.
  8. Remove the fried potato balls with a slotted spoon and drain them on paper towels.
  9. Season with salt and pepper to taste.
  10. Let them cool for a minute or two before serving, as the cheese inside will be very hot.
