This lightened-up pierogi casserole combines frozen pierogies, caramelized onions, and melted mozzarella cheese in a creamy sauce for a delicious and comforting meal.

- 1 package frozen pierogies (Choose your favorite flavor of frozen pierogies.)
- 1 large onion, sliced (For caramelizing.)
- 2 tablespoons olive oil (For cooking onions.)
- 2 cups mozzarella cheese, shredded (Can substitute with cheddar or other cheeses.)
- 1 cup sour cream or Greek yogurt (Greek yogurt can be a healthier alternative.)
- 1 cup chicken or vegetable broth (For the creamy mixture.)

Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat the olive oil over medium heat and add the sliced onions. Cook the onions until they are caramelized, which should take about 10 to 15 minutes.
- While the onions are cooking, in a large bowl, mix the sour cream (or Greek yogurt) with the broth until fully combined and smooth.
- In a greased casserole dish, layer half of the frozen pierogies, followed by half of the caramelized onions, and half of the shredded cheese.
- Pour half of the creamy sour cream mixture over this layer.
- Repeat the layering process with the remaining ingredients.
- Cover the casserole dish with foil and bake it in the preheated oven for 30 minutes.
- Remove the foil and continue baking for an additional 15 minutes, or until the casserole is bubbly and golden on top.
