Description

This lightened-up pierogi casserole combines frozen pierogies, caramelized onions, and melted mozzarella cheese in a creamy sauce for a delicious and comforting meal.


Ingredients

  • 1 package frozen pierogies (Choose your favorite flavor of frozen pierogies.)
  • 1 large onion, sliced (For caramelizing.)
  • 2 tablespoons olive oil (For cooking onions.)
  • 2 cups mozzarella cheese, shredded (Can substitute with cheddar or other cheeses.)
  • 1 cup sour cream or Greek yogurt (Greek yogurt can be a healthier alternative.)
  • 1 cup chicken or vegetable broth (For the creamy mixture.)
  • to taste Salt and pepper (For seasoning.)
  • for garnish Fresh parsley (Chopped, for serving.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat the olive oil over medium heat and add the sliced onions. Cook the onions until they are caramelized, which should take about 10 to 15 minutes.
  3. While the onions are cooking, in a large bowl, mix the sour cream (or Greek yogurt) with the broth until fully combined and smooth.
  4. In a greased casserole dish, layer half of the frozen pierogies, followed by half of the caramelized onions, and half of the shredded cheese.
  5. Pour half of the creamy sour cream mixture over this layer.
  6. Repeat the layering process with the remaining ingredients.
  7. Cover the casserole dish with foil and bake it in the preheated oven for 30 minutes.
  8. Remove the foil and continue baking for an additional 15 minutes, or until the casserole is bubbly and golden on top.
  9. Garnish your Lightened-Up Pierogi Casserole with fresh parsley before serving.
