- 12 ounces pasta (spaghetti, linguine, or penne)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 cups fresh baby spinach
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup of pasta water.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté 1 minute until fragrant.
- Add fresh spinach and cook until wilted, about 2 minutes.
- Reduce heat to low and stir in ricotta cheese, Parmesan, lemon zest, and lemon juice until creamy.
- Add cooked pasta to the skillet and toss gently to coat, adding reserved pasta water if needed.
- Season with salt, black pepper, and optional red pepper flakes.
- Garnish with chopped parsley and serve warm.
