Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats. Set aside.
  2. In a large mixing bowl or stand mixer, cream the softened butter, light brown sugar, and granulated sugar together until light and fluffy, about 2 to 3 minutes.
  3. Beat in the eggs one at a time, then mix in the lemon juice, lemon zest, and vanilla extract.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add to the wet mixture.
  5. Fold in the old-fashioned oats and white chocolate chips, if using.
  6. Drop about 2 tablespoons of dough per cookie onto prepared baking sheets, spacing them 2 inches apart. Gently flatten the tops.
  7. Bake for 10 to 12 minutes, or until the edges are golden and the centers are just set. Let cool on the baking sheet for a few minutes.
  8. Whisk together the powdered sugar, lemon juice, and lemon zest in a small bowl until smooth.
