- 4 fillets salmon (skinless)
- 2 tablespoons olive oil (for drizzling)
- 1 lemon juice (freshly squeezed)
- 1 teaspoon dried herbs (such as thyme or dill)
- 1.5 pounds baby potatoes (or small Yukon gold)
- 2 tablespoons butter (melted)
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 bunch asparagus (trimmed)
- 1 tablespoon olive oil (for drizzling)
- 1 teaspoon salt
Instructions
- Preheat the oven to 425°F (220°C). Boil the baby potatoes until tender, about 15 minutes.
- Drain the potatoes, then smash them slightly with a fork. Place on a baking sheet.
- Drizzle with melted butter, salt, and pepper. Bake for 20 minutes until crispy.
- In a bowl, mix olive oil, lemon juice, and dried herbs. Coat the salmon fillets with the mixture.
- Place the salmon on the baking sheet with the potatoes during the last 10 minutes of baking.
- Toss the asparagus with olive oil and salt. Add to the baking sheet during the last 10 minutes of cooking.
- Remove everything from the oven and serve immediately.
