  • 2 tablespoons olive oil (for drizzling)
  • 1 lemon juice (freshly squeezed)
  • 1 teaspoon dried herbs (such as thyme or dill)
  • 1.5 pounds baby potatoes (or small Yukon gold)
  • 2 tablespoons butter (melted)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 bunch asparagus (trimmed)
  • 1 tablespoon olive oil (for drizzling)
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 425°F (220°C). Boil the baby potatoes until tender, about 15 minutes.
  2. Drain the potatoes, then smash them slightly with a fork. Place on a baking sheet.
  3. Drizzle with melted butter, salt, and pepper. Bake for 20 minutes until crispy.
  4. In a bowl, mix olive oil, lemon juice, and dried herbs. Coat the salmon fillets with the mixture.
  5. Place the salmon on the baking sheet with the potatoes during the last 10 minutes of baking.
  6. Toss the asparagus with olive oil and salt. Add to the baking sheet during the last 10 minutes of cooking.
  7. Remove everything from the oven and serve immediately.
