- 1 lb (500g) baby potatoes
- 1/4 cup olive oil
- 2 tablespoons butter, melted
- 3 cloves garlic, minced
- 1 tablespoon Italian parsley leaves, chopped
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1/4 teaspoon salt
- 3 dashes ground black pepper
Instructions
- Preheat the oven to 350°F (176°C).
- Slice each potato horizontally without cutting all the way through, creating slits in the potato.
- In a bowl, mix olive oil, melted butter, garlic, parsley, lemon juice, honey, salt, and pepper until well combined.
- Place the potatoes in a roasting pan and brush with the oil mixture, making sure to coat inside the slits. Reserve some of the mixture for basting later.
- Roast the potatoes in the preheated oven for 1 hour, basting with the reserved oil mixture at the 30-minute mark.
- Serve immediately after roasting, and enjoy the crispy, golden potatoes!
