Ingredients

  • 1 lb (500g) baby potatoes
  • 1/4 cup olive oil
  • 2 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 1 tablespoon Italian parsley leaves, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 3 dashes ground black pepper

Instructions

  1. Preheat the oven to 350°F (176°C).
  2. Slice each potato horizontally without cutting all the way through, creating slits in the potato.
  3. In a bowl, mix olive oil, melted butter, garlic, parsley, lemon juice, honey, salt, and pepper until well combined.
  4. Place the potatoes in a roasting pan and brush with the oil mixture, making sure to coat inside the slits. Reserve some of the mixture for basting later.
  5. Roast the potatoes in the preheated oven for 1 hour, basting with the reserved oil mixture at the 30-minute mark.
  6. Serve immediately after roasting, and enjoy the crispy, golden potatoes!
